Ingredients:

  • 1 cup wholemeal spelt flour
  • 1 cup desiccated coconut
  • 1 cup rolled oats
  • 3/4 cup coconut sugar
  • 1/2 cup coconut oil
  • 2 tablespoons rice malt syrup
  • 1/2 teaspoon bicarbonate of soda
  • 4 tablespoons boiling water

 

Method:

  • Pre-heat the oven to 160°C and line 2 baking trays.
  • In a large bowl place flour, coconut, oats, sugar and mix.
  • In a large saucepan, heat coconut oil and rice malt syrup until starts to bubble.
  • In a separate cup or jug, combine bicarbonate of soda with boiling water.
  • Pour bicarbonate mixture into saucepan, stir and turn heat off.
  • Pour liquid in saucepan into the dry ingredients in the bowl and combine.
  • Roll into balls and flatten with your fingers onto the baking tray.
  • Bake in the oven for 8-10 minutes.
  • If you like your biscuits quite crispy, cook for a further 1 -2 minutes.
  • Remove from the oven and allow to cool completely on the tray before eating (this will allow them to also crisp up slightly).
