Ingredients:
- 1 cup wholemeal spelt flour
- 1 cup desiccated coconut
- 1 cup rolled oats
- 3/4 cup coconut sugar
- 1/2 cup coconut oil
- 2 tablespoons rice malt syrup
- 1/2 teaspoon bicarbonate of soda
- 4 tablespoons boiling water
Method:
- Pre-heat the oven to 160°C and line 2 baking trays.
- In a large bowl place flour, coconut, oats, sugar and mix.
- In a large saucepan, heat coconut oil and rice malt syrup until starts to bubble.
- In a separate cup or jug, combine bicarbonate of soda with boiling water.
- Pour bicarbonate mixture into saucepan, stir and turn heat off.
- Pour liquid in saucepan into the dry ingredients in the bowl and combine.
- Roll into balls and flatten with your fingers onto the baking tray.
- Bake in the oven for 8-10 minutes.
- If you like your biscuits quite crispy, cook for a further 1 -2 minutes.
- Remove from the oven and allow to cool completely on the tray before eating (this will allow them to also crisp up slightly).
