Ingredients:

  • 1 large carrot, chopped into quarters
  • 6 Medjool dates, seeds removed
  • 1 tablespoon coconut oil
  • 1 cup raw almonds
  • 1/2 cup raw cashews or walnuts
  • 1/2 cup dessicated coconut (organic)
  • Extra dessicated coconut for coating

Method:

Place all ingredients into a powderful blender, Thermomix, Vitamix or food processor (needs to be powderful enough to blitz nuts).

Blitz ingredients until mixture all comes together and nuts are broken down.

Place extra dessicated coconut into a bowl. Roll mixture into balls and coat in dessicated coconut.

Place balls into a container and refrigerate to firm up.
