I have a few different ways to make this recipe, as depending on how much time you have you can make it quite quick and easy!
Ingredients:
500g chicken breast or thigh, diced
1 onion, diced
1 packet thick rice noodles (pad Thai noodles)
2 carrots, sliced
1-2 zucchini’s, sliced
1cm fresh ginger, grated or diced
2 garlic cloves, grated or diced
1 handful basil leaves
3 tablespoons crunch peanut butter
1/4 cup soy sauce, tamari or coconut amino’s (healthier soy sauce option found in health food store or grocery store)
Salt and pepper
2 limes, juiced
Method:
Place rice noodles into a bowl of boiling water to sit until they become soft, then strain and set aside.
Heat olive oil in the pan and sauté onion, add carrot, zucchini, ginger and garlic and cook for a few minutes until lightly soft.
Add chicken and cook until browned (or remove vegetables, place in a bowl and set aside until chicken is cooked).
Combine sauce ingredients into a small bowl – soy sauce, peanut butter, salt, pepper and lime juice.
Pour sauce over the chicken and vegetables.
Add rice noodles and the basil leaves and combine well.
If there isn’t enough sauce and flavour, add more of the sauce ingredients until it is fragrant and to your liking!
*Another addition is on a separate pan cook 2-3 whisked eggs until soft, add to the dish at the end (optional).
