Ingredients:

  • 500g Organic dark chocolate (found at The produce, bulk wholefoods store)
  • 2 tablespoons of coconut oil
  • ¾ cup mixed nuts (I used hazelnuts, almonds, roasted peanuts and pistachios)
  • ¼ cup dried apricots, chopped
  • ¼ cup cranberries, fresh or dried
  • 1 cup fresh or frozen raspberries

Method:

  • Line a slice tray with baking paper.
  • Place all nuts, dried fruit and raspberries onto the lined tray and spread evenly so the tray is covered.
  • Place the organic dark chocolate and coconut oil in a saucepan over low heat and stir continuously. Alternatively, place dark chocolate and coconut oil into Thermomix bowl and cook for 5 minutes, 60 degrees, speed 0.5. Continue until chocolate has melted.
  • Pour melted chocolate mixture over the ingredients in the tray and smooth over with a spatula so all ingredients are covered.
  • Place in the refrigerator until completely set.
  • Cut into pieces and store in a container in the fridge.
