These bliss balls do not contain refined sugar and have a nice citrus flavour with the coconut. I used to absolutely love when my Mum would make Lemon Coconut Slice made on condensed milk and milk arrowroot biscuits! NOT healthy at all, but yum! I attempted to make a healthy treat with similar flavours and I think its tasty! Give these bite sized treats a go.

Ingredients:

  • 2 cups raw cashews
  • 1 cup organic desiccated coconut (preservative free)
  • 2 tablespoons coconut oil
  • 2 tablespoons rice malt syrup
  • Juice of 1 fresh lemon (more if you love lemons)

 

Place raw cashews into a food processor and blend until it becomes a fine crumb.

Add coconut, coconut oil, rice malt syrup, lemon juice and blend until mixture has combined well.

Taste test to see if you want more lemon juice, if its too soft to roll into balls, add some almond meal to make it easier to roll.

Roll into balls, coat in coconut and refrigerate to firm up slightly.

Yum!
