Orange and Cardamom cake is the perfect recipe for morning tea to have with a cuppa or even a Birthday Cake! Yes, it would be perfect! The combination between the orange and the spice cardamom is so divine you will want to make this cake over and over again. It also freezes well, which means you can have a stock pile and be a great hostess when guests come over.
- 3 cups almond meal
- 3 teaspoons baking powder
- 3 eggs
- 2 tablespoons ground cardamom
- zest of 3 oranges
- juice of 1 orange
- 3/4 cup rapadura sugar
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract or paste
- pinch of sea salt
Pre heat oven to 180°C and line or grease a small springform cake tin.
Place all ingredients into a bowl and using a electric hand beater, beat on high for 2 minutes.
Pour batter into the cake tin and bake in the oven for 20 minutes or until cake is cooked through.
Allow to cool slightly before cutting.
Dust with extra orange rind.
