Ingredients:

  • 2 tablespoons poppyseeds
  • 1/4 cup coconut milk
  • 2 eggs
  • 100g butter, melted
  • zest of 1 orange
  • Juice of 1 orange
  • 2 cups spelt flour
  • 2 teaspoons baking powder
  • 3 tablespoons honey or rice malt syrup

Method:

Preheat the oven to 180 degrees Celcius. Line 1 muffin tray with muffin or patty papers and spray with coconut oil spray to ensure no sticking.

Place poppyseeds into a small jug with the coconut milk, and set aside for 10 minutes to soak.

Meanwhile, place all other ingredients into a bowl, add poppyseeds and milk to the mixture and stir until all ingredients are combined well.

Pour mixture into muffin papers evenly distributed between 10 – 12 muffin holes.

Place in the oven and bake for 15 minutes. Once cooked, allow to cool on a cooling tray for 5 minutes (if you can hold out that long!).

These should be soft, moist and ready to eat!
