Ingredients:
- 3 ripe bananas
- ½ cup coconut oil (soft)
- 3 tablespoons honey
- 2 eggs
- 230g plain gluten free flour
- 2 tsp baking powder
- 1 tsp bicarb soda
- 1 pinch himalayan sea salt
- 60g almond or coconut milk
- 1 tsp natural vanilla extract
- 3 tsp ground cinnamon
- Crushed walnuts to top
Method:
- Preheat oven to 180 °c and place baking paper into a loaf tin and set aside.
- Place bananas into a bowl and mash using a fork.
- Add soft coconut oil to the bananas and mix together.
- Add honey and eggs and mix.
- Add gluten free flour, baking powder, salt, bicarb soda and ground cinnamon to the bowl and mix very well.
- Add almond milk and vanilla extract and mix well making sure all ingredients are combined well.
- Top with crushed walnuts or extra banana (optional)
- Pour into lined loaf tin and place in the oven for 50-60 minutes.
- Allow to cool slightly before removing from the tin.
