Ingredients:

  • 3 ripe bananas
  • ½ cup coconut oil (soft)
  • 3 tablespoons honey
  • 2 eggs
  • 230g plain gluten free flour
  • 2 tsp baking powder
  • 1 tsp bicarb soda
  • 1 pinch himalayan sea salt
  • 60g almond or coconut milk
  • 1 tsp natural vanilla extract
  • 3 tsp ground cinnamon
  • Crushed walnuts to top

Method:

  • Preheat oven to 180 °c and place baking paper into a loaf tin and set aside.
  • Place bananas into a bowl and mash using a fork.
  • Add soft coconut oil to the bananas and mix together.
  • Add honey and eggs and mix.
  • Add gluten free flour, baking powder, salt, bicarb soda and ground cinnamon to the bowl and mix very well.
  • Add almond milk and vanilla extract and mix well making sure all ingredients are combined well.
  • Top with crushed walnuts or extra banana (optional)
  • Pour into lined loaf tin and place in the oven for 50-60 minutes.
  • Allow to cool slightly before removing from the tin.
