Yum yum yum!! Perfect for a barbeque with a nice crisp salad.

Ingredients: 

Serves 2-4

  • 500g chicken breast, diced
  • wooden skewers
  • 1/2 cup natural peanut butter
  • 1/4 cup soy sauce or tamari
  • 1/4 cup coconut or rapadura sugar
  • Juice of 1 fresh lime
  • 3/4 cup coconut milk
  • 1/2 cup chopped coriander
  • Salt and pepper

 

In a small saucepan over low heat, combine peanut butter, soy sauce, coconut sugar, lime juice, coconut milk, coriander, salt, pepper and stir until melted, set aside.

Place chicken pieces onto skewers and set aside.

Heat coconut oil in a frying pan until hot.

Place chicken skewers on the hot pan and brown slightly the whole way around before adding the sauce (you may need to do in 2 batches).

Once the chicken has cooked slightly, pour roughly half the sauce over the skewers and continue to cook while turning.

Check chicken is cooked through.

Remove from the heat and top with extra satay sauce and more fresh lemon juice.

Serve with your choice of salad or vegetables.
